For a few weeks now we have once again been in the middle of the new carrot harvest. This supplies us with lovely fresh carrots virtually straight from the field.
It is true that these young carrots sometimes have lower Brix levels than later in the season. In the first organic carrots we definitely see lower levels than we would like at times. Other root vegetables such as beetroot will also soon be available in larger quantities, which will provide opportunities to make new volumes of juice and fibre from beautiful fresh produce.
